Fresh mackerel in banana leaf

Pip Sumbak has put together some parcels of beautiful spanish mackerel (approx 140g per serve) with king oyster mushroom, ginger, chilli and lemongrass.

Simply place the whole wrapped parcel in a steamer for 10minutes or gently grill on the bbq for a similar amount of time.

Serve with greens and steamed rice or noodles.
